Pago Casa Gran is an organic and bio-diverse single estate winery(pago) of 100hectares. Two different types of soil, we have wihte clay, mixed with sand in the bottom of the valley and sandy soil in the skirt of the moutain. The vines are surrounded by permanent cover crop that helps to make expression of the grapes more authentic. Grapes are managed by gravity to avoid damage of skins and seeds. Pago Casa Gran uses native yeast for fermentation. Pago Casa Gran only uses its own estates grapes which are Garnacha tintorera, Syraz, Monastrell, Petit Verdot.
Wine Making:
Fermentation and maceration in stainless steel tanks (temperature controlled). Each variety has been processed by its own with native yeast and with different length of maceration even for the same variety depending on the grape and soil type. Malolactic fermentation in stainless steel tanks (temperature controlled).After malolactic fermentation wine rests in stainless steel tanks. Wine is released 4-6 months after bottling.
Tasting:
Colour: Bright, intense cherry, garnet rim and some live violet.
Nose: Powerful aroma, very liqueur, cherry, smoky, with greenery, herbaceous and balsamic (scrubland, menthol, fresh bay ...)
Palate: Vigorous and open mouth, medium bodied, alcoholic, toast, good acidity, soft, fruity, balanced, with an almost imperceptible tannins and very tasty, makes a complicated but very balanced wine.
Serving Temperature: 15ºC-16ºC.
